Ingredients

  • 1 package Savoura cocktail tomatoes
  • 8 small store-bought naans
  • 8 slices bacon
  • Arugula
  • 50 ml (¼ cup) mayonnaise
  • 50 ml (¼ cup) roasted pepper purée
  • 1 medium-size onion, sliced
  • 60 ml (4 tbsp.) Jack Daniel’s whiskey
  • 15 ml (1 tbsp.) butter
  • Salt, pepper, and sugar

Preparation
 

  1. Cut tomatoes into slices about 5 mm thick and place on an oiled baking sheet.
  2. Salt and pepper tomatoes, then lightly sprinkle with sugar.
  3. Bake at 375°F for 30 minutes.
  4. In a skillet, caramelize onion in butter until golden brown, deglaze with whiskey, and reduce until dry. Set aside.
  5. Cook bacon in a skillet and set aside.
  6. Combine roasted pepper purée and mayonnaise.

Presentation

  1. Brush each of four naans with mayonnaise mixture.
  2. Add tomatoes, bacon, arugula leaves, and caramelized onions.
  3. Top with four remaining naans and enjoy!
