Ingredients

3 large Turbana chayotes peeled, seeded, diced into small cubes (about 4 cups)

1 cup chopped Turbana pineapple

1/4 cup chopped red onion

1/2 cup chopped red bell pepper

1/2 cup chopped mango

2 tablespoons champagne vinegar

2 tablespoons fresh orange juice

1 tablespoon fresh lime juice

1/2 teaspoon chili powder

Preperation Steps

Combine chayote, pineapple, onion, bel pepper, and mango in a large bowl.||In a small bowl combine vinegar, orange juice, fresh lime juice, and chili powder for the dressing. Season to taste to adjust spiciness.

Pour dressing into a large bowl and toss to blend. Cover and chill at least 2 hours, tossing occasionally.

Enjoy as a snack with Turbana plantain chips, on a bed of mixed greens, or with dinner as a compliment to your favorite dish.
